The golden eye snapper (*Beryx splendens*), also known as *kinmedai* in Japanese, is a deep-sea fish belonging to the Berycidae family. It is widely distributed in temperate to tropical deep waters around the world, particularly common in the seas surrounding Japan. Its name comes from its striking appearance—large, vivid golden-red eyes adapted to low-light deep-sea environments, and a bright red, oval-shaped body covered with fine scales.
Kinmedai has delicate, fatty flesh with a mild, sweet flavor, making it a highly valued ingredient in Japanese cuisine. It is often prepared steamed, simmered, grilled with salt, or served as sushi and sashimi.
